In the kitchen of my step fathers house, a nightly meal would be served of a quality scarce to Meeteetse, Wyoming. All comers would come and revel at his food and question him as to why he chose raising sheep over opening a restaurant. Over the years I have realized because of his passion, he did not want to lose his passion. Often times he would say that the only reason he knew how to cook was because when he was growing up, "If you didn't learn to cook, you didn't eat." I know this not to be true, he loved it, he loved the smiles on peoples face after they ate a meal in utter silence, he loved the craft, to discuss it with whoever would listen.
Me, I listened to it all and finally when he let me cook my first dish from start to scratch(braised lamb shank marinara), I knew I was going to be a chef. After some cooking I attended culinary school in San Francisco in 2002. I have never turned back. I carry the enthusiasm of my step father kitchen of my youth as well as 25 years of experience all over the country in a range of settings.
I have worked fine dining with celebrity chefs, dive bars and everything in between. But my passion, as was my step fathers is the smile on peoples face with personal service, the thrill of passing on some knowledge or gaining some. So with that I have embarked on my own with the goal in mind of providing the best food and most passion I can to every event. The tattoo on the arm says, "cook free or die" and the name of the business is specialty food services because I enjoy every aspect of being a private chef. Be it large or small, teaching or consulting, I bring a life of love to all of my jobs and look forward to sharing that with you!
Appetizers may be done in bite size portions or platters, perfect for group entertainment or in home formal settings.
Fresh, ripe, Roma tomatoes with fresh mozzarella and basil, aged balsamic vinegar, sea salt and house made croutons
This is a fine, honey and maple brine salmon smoked over open flame slowly, served with a fresh fruit and mixed green salad, fresh ricotta and honey.
A crisp fresh salad with fresh fruit and local mixed greens(as available) served with a fresh herb Vinaigrette.(any dressing is available upon request)
Made with fresh romaine lettuce and grated parmesan. Topped with a house made ceaser dressing.
Shrimp boiled in shell in a lemon court-bouillon, shock chilled and served with a house made tequila blanco cocktail sauce.
Open fire smoked homemade meatballs, served with a slow cooked bacon and honey marinara. These are large meatballs and serve as a great option for meet and great, or walk around events as well as in home meals.
Listed here are just a few entrees I have done for larger caters. The sky is the limit as far as entrees go especially for in home private meals.
Drizzled with cucumber dill sauce and served with wild rice and seasonal vegetables.
Served with a horseradish dipping sauce vegetable and starch as arranged with Chef and the client.
A creamy macaroni casserole made with the finest of three cheeses smoked gouda, parmesan, and blended chedder. Made with full, smoked and roasted chicken and thick applewood smoked bacon.
A traditional Italian meat sauce very slow cooked and hearty with meat. Options of the meat vary and can be adapted to the clients protein of choice.
Can use multiple proteins for wither bar, it also offers vegetarian options and gluten free options for groups of people, I have found these great for office lunches.
If desserts are desired I work with the best dessert chef I can find depending on what the client requests to provide the best dessert service available.

Honey brined salmon with lemon and dill cream spread, rotating accompaniments and fresh garlic toast points.
Two meats and three cheeses in rotation with traditional accompaniments
choice of roasted and braised chicken, flank steak or pork, with jalapeno, salsa, sour cream and garlic lime black beans
house made Italian sausage stuffed in fresh mushrooms, baked and topped with Moderna Balsamic bin, with fresh shredded parm
Mixed greens, strabefry, blueberry and choice of roasted chicken or smoked salmon, finished with house bin and garlic toast points
Naan flatbreads with house made marinara and fresh mozzarella cheese
House marinara, fresh mozzarella, pepperoni, sausage and prosciutto. topped with fresh basil, olive oil and fresh parm.
House marinara, ripened tomatoes, roasted garlic and fresh mozzarella. Finished with olive oil and salt and pepper with fresh Parmesan.
house made honey and balsamic smoked marinara with pork and flank steak with pickled red onion, finished with fresh parm and parsley.
